No Mischief Monday
Pizza dough is incredibly easy to make, but it took us a few steps to get here. We went from take-out to frozen, then made pizza from a pre-packed kit, then from pre-made pizza shells. The final step was to making our own dough from scratch.
We use Laurel's Kitchen pizza dough recipe which can be found here (click on the top recipe). You can use the dough to make one deep dish pizza, or two thin crust pizzas. We do both, but when I do two crusts I make two whole pizzas at a time - one for eating immediately, and one to throw in the freezer for a quick, yummy meal later.

The secret to great pizza at home is in the crust. Just about any combination of flour+yeast+water will work but you have to make it a day ahead. Separate the dough into crust sized balls and refrigerate the dough for at least 24 hours. The next day place a ball on your pizza pan and press it into place without kneading it. Let it warm up for about 30 minutes and then proceed as usual.

ReplyDeleteGood to see you here. Thank you for the tips. I will be trying this. I usually put a few tablespoons of olive oil in my pizza dough, plus some oregano and sesame seeds. Mmmm, getting hungry.
I don't want to make you crazy but I have been making tomato paste from scratch.... 10 pounds of roma tomatoes, skinned and cored, squeeze out the seeds, too. Put the meaty parts into a crock pot and cook until the whole bunch is reduced to 1/2-1/3 of the original volume.
ReplyDeleteAt this point you can add salt, herbs and spices to taste. I put this into 1/2 pint canning jars and add 1 crushed clove of garlic, 1/2 tsp of oregano, 1/2 tsp of Italian spice, 1/2 tsp of Johnnies seasoning salt and a pinch of red pepper flakes to each jar.
This can be frozen in cubes or jarred. 10 pounds of romas will get you about 4 8 ounce jars of paste.
It seems like a lot of work for 4 small jars but when used as pizza sauce---THIS STUFF ROCKS!

ReplyDeleteThank you for adding more to the pizza! I have been making my own pizza sauce, but with canned tomatoes. Fresh Roma's are usually the least expensive, so this would be a thrifty way to go.
